Kale Salad with Tahini dressing
Easy, fast and delicious!
I didn’t know what Kale was until I moved to the US 10 years ago. The introduction was gentle and I fell immediately in love with it.
Honestly no surprise, when it comes to produce, vegetables and fruits, I’m a total junkie!
This is one of my all time favorite ways to eat Kale, it’s easy, fast, delicious, nutritious and budget friendly.
YOU NEED:
1 bunch curly Kale
1 large Juice of Lemon + Zest
2 Tablespoon Pepitas (Pumpkin seed)
2 tablespoon dried berries or golden raisin
1.5 tablespoon Tahini
Salt & Pepper to taste
YOU DO:
1- Wash kale, remove the stem and chop the leaves to medium size (really freestyle)
2- Add chopped kale + Pepitas + dried Berries/Golden Raisins to a big bowl.
3- In a separate smaller bowl, add the juice + zest of lemon, tahini, salt and pepper. Whisk with a fork till it’s mixed and texture starts to thicken. Add 1 tablespoon of water to the mix and whisk again till you have a dressing like consistency (not too thick and not too watery). Add water as desired to create the consistency you like.Once ready, poor it over the kale and mix it well.

PS: If you like to make it a little more juicy, you can chop a full avocado and add to your salad.
If you need the Kale to be a little softer and easier on your stomach, you can massage it with a little bit of olive oil ahead of time and let it rest for 15 min before making the salad.
