How To Ease The Kale In?
Recipe Included: Massaged Kale with Avocado and Maple Syrup
If your relationship with Kale has been a bit off, then this might be just for you!
I personally love Kale and so does my stomach, but I know that’s not the case for many. Loaded with important micronutrients and antioxidants, kale is one of the most nutritious leafy greens available. It’s a nutritious food rich in antioxidants, vitamin C, vitamin K, and beta-carotene. It also contains nutrients that can support eye health, weight management, heart health, and more.
Certain substances in kale can bind bile acids in the digestive system and prevent them from being reabsorbed. This reduces the total amount of cholesterol in the body. Last but not least, Kale is actually loaded with compounds that are believed to have protective effects against cancer.One of these is Sulforaphane, a substance that has been shown to help block the formation of cancer at the molecular level.
One of the ways to make Kale more enjoyable and also easier on your digestive system is to massage it. Massaging kale helps break down the tough and fibrous structure, giving it a softer, easier-to-eat texture. Working it with your hands takes the edge off, making it tender enough to eat without cooking. It also makes the flavor gentler and less bitter. Don’t overdo it though, mushy kale is worse than tough kale!
For this salad (inspired by Medical Medium’s recipe), you’re going to massage your Kale with Avocado. It’s going to feel messy but the result is super delicious.
YOU NEED:
1 Medium bunch of curly Kale
1 Medium ready to rock Avocado
1/ 2 medium lemon
1 Tablespoon Maple Syrup
(The original dressing calls for Honey, and if you’re not Vegan, that can be a suitable choice for you)
A handful of cherry tomatoes
1 Medium cucumber or 2 small persian cucumbers
2 Medium red radish
1 Teaspoon organic Dulse flakes
Salt & pepper to taste
YOU DO:
1- Wash your Kale, remove the stems, chop all the leafs and add them to a large mixing bowl or salad bowl
2- Squeeze your lemon and pour the juice over your chopped kale
3- Add the sliced Avocado and the Maple syrup to the mix, pull your sleeves up and start massaging it with your capable hands for about 3-5 min and set aside
4- Chop tomatoes, Cucumber and Radish and add to the bowl
5- Add your Dulse Flakes (I use VitaminSea Dulse flakes)
6- Mix everything together really well and bon appetit!
